CHAPTER 1 · LÖNNUGNEN

It began with 70,000 pizzas

While he planned and built the restaurant building of the future, founder Claes Stenmark baked over 70 thousand pizzas for collection in his garden. The business is part-owned by, among others, the villagers.

CHAPTER 2 · THE BUILD

Seven years, 379 glass panels

The build took seven years from idea to opening in February 2025. The frame is entirely wood, anchored with ground screws instead of concrete. The facade consists of over a thousand square metres of glass. The architecture is inspired by the Swedish nature house: a home inside a greenhouse.

CHAPTER 3 · THE CYCLE

Round and round – and finally onto your pizza

The flue gases from the pizza oven are recycled and heat the greenhouse and the hot water. The water from the business is purified in our own mini treatment plant and recycled for irrigation. The carbon dioxide you breathe out becomes nourishment for the tomatoes. The goal: a restaurant built for the future.

A groundwater heat pump and free cooling from the groundwater do the rest – even when it is summer all year round under the glass roof.

CHAPTER 4 · THE PRODUCE

The harvest happens a few metres from your table

Tomatoes, basil and other herbs grow in the beds in the middle of the restaurant. What is harvested on site has far more flavour, as it needs neither transport nor storage. The rest we source as close by as we can: cheese from Swedish farms, beer from Hyllie, spirits from Skånska Spritfabriken, apple juice from Kivik.

CHAPTER 5 · OUR OWN CURING

Cured, smoked and air-dried on site

Here on site we cure, smoke and air-dry our own charcuterie, which ends up on your pizza or is enjoyed just as it is.
